What Sets the Price

By health, not by grade

The definition of Iga Beef contains no carcass grade.
A purebred Japanese Black heifer, raised by a member of the Iga Beef Production Promotion Council, with Iga as the final and longest place of rearing.
And the price is set by a buyer who has seen the living animal. The balance comes from how it is raised, not from a number.
